Chicken Noodle Soup

Ingredients

For 6 people ()

  • 2 tablespoon(s) Vegetable Oil
  • 1 Medium Onion, chopped
  • 1 Large Carrot, peeled
  • 1 Stalk of Celery, sliced 1/4-inch thick
  • 81 cup(s) Chicken Stock
  • 2.5 cup(s) Cooked
  • 0.25 cup(s) Minced Fresh Parsley

Directions

1. Heat vegetable oil in a large stockpot over medium-high heat. Add onions, carrot, and celery and saute until softened, about 5 minutes. Add the chicken stock and shredded chicken meat. 

2. Bring the soup to a boil, reduce heat, and simmer until the vegetables are tender and the flavors meld, 10 to 15 minutes.

3. Stir in the noodles and cook until just tender, about 8 minutes. Stir in the parsley and salt and pepper to taste. Serve immediately.
