Ingredients

- 2 Chicken Breasts
- 1.5 teaspoon(s) Lemon Zest
- 2 tablespoon(s) Capers
- 1 cup(s) Low Sodium Chicken Broth
Directions
1. Slice chicken breasts horizontally
2. Wrap chicken breasts in plastic wrap and use a meat pounder to pound out until they are about 1/4 inch thin. Then salt and pepper the chicken breasts lightly.
3. Over medium-high heat, add b2 tablespoons of butter and heat until the butter is bubble. Add the chicken breasts and cook until each side is a light brown. (Sould take 3-4 minutes on each side). Remove chicken breasts when they are brown.
4. Add chicken broth to pan, scrape the browned bits off the pan, add the remaining butter, lemon zest, and capers. When the sauce has reduced by 25% add chicken breasts to the pan and cook to heat the sauce
5. Serve (over noodles or rice if preferred) and enjoy!
