Spinach - Zucchini Soup

Ingredients

For 6 people ()

  • 1 tablespoon(s) Olive Oil
  • 1 Large Onion, diced
  • 1 Medium Zucchini, cut into 3/4-inch pieces
  • 2 cup(s) Low-Sodium Vegetable Broth
  • 1 cup(s) Cooked White Beans such as Cannellini
  • 4 ounce(s) Baby Spinach
  • 2 tablespoon(s) Lemon Juice
  • 2 teaspoon(s) Grated Lemon Zest

Directions

1. Heat oil in large sauce pan over medium heat.

2. Sautee onion 3-5 minutes, or until translucent.

3. Add zucchini and cook 8 minutes, or until vegetables are browned.

4. Add vegetable broth and 2 cups water, bring to a boil.

5. Stir in beans and spinach and return to a boil. Reduce heat to medium-low and simmer 5 minute, or until spinach is wilted.

6. Stir in lemon juice, zest, and mint. Season with salt and pepper, if desired.
