Meet Charlie, our head butcher
Charlie (pictured above) has been a part of the Pete’s Fresh Market extended family since 1992. He began his career cutting chicken, organizing meat coolers, filling display cases, and washing equipment. From the beginning, the Pete’s environment thrived on teamwork, so Charlie became an apprentice at an early age. Through mentors (like his brother-in-law Miguel), hands on experience, and a lot of practice, Charlie eventually mastered all the old world butcher fundamentals. As the company grew and Pete’s meat counters expanded in size and variety, Charlie climbed the ranks in the department.
Charlie has been integral in training the next generation of professional butchers and maintaining the full butcher shop experience. At Pete’s, we thrive on the personal interaction with our customers. We love to recommend new cuts of meats and to teach our customers how to season and prepare their selections. What you ultimately serve on your dinner table is a reflection of us, so we have just as much pride in your cooking as you do.
Charlie wants everyone to know that we offer pre-packaged and pre-sliced selections of our most popular cuts, but if you don’t see what you like, please don’t hesitate to ask. We are definitely known for preparing arrachera (skirt steak) to your exact specifications, performing complimentary fat trimming for our more flavorful beef cuts, butterflying chicken breasts, and tenderizing pork chops. Let us do what we do best! Our butchers are especially proud of our homemade sausage, which is ground in house using fresh pork shoulder. And finally, if you’re short on prep time, Charlie recommends our choice taco meat, seasoned fajitas, or prepared kabobs!
A Few Fun Facts! Charlie is the Chicago Fire’s #1 soccer fan. Also, it’s a family affair for Charlie as his brother-in-law Miguel, brother Hector, cousin Francisco, and son Carlos are also a part of the Pete’s team.
